A Special Recipe from Celebrity Chef Ming Tsai
In a sauté pan over medium heat, add a 1 tbsp of oil and swirl to coat the pan. Add shiitake, shallot and sauté for 2 minutes. Add corn and cook for 4 minutes. Deglaze the pan with the Ume Brown Rice Vinegar. Remove from the heat and whisk in ¼ cup extra virgin olive oil. Check for seasoning. Place frisée on a large serving platter, spoon warm vinaigrette over.

Pureness Vinegar Salad Dressing (makes 1 -2 servings)
1/4 cup Pureness Vinegar
1 Tbsp olive or salad oil
2 tsp honey*
1/2 tsp salt (and pepper to taste)
Finely grated onions, daikon, garlic or parmesan cheese are great additions to enhance flavor! Mix thoroughly in a bowl or use a blender or processor.
Complement any meal by adding these ingredients to dressing:
Soy Sauce (1 tsp soy sauce, 1/2 tsp sesame oil, 1 tsp honey)
Honey-Dijon (1 tsp Dijon mustard, 1 tsp honey)
Miso (1 1/2 tsp miso, 1/2 tsp soy sauce, 1 tsp honey)
*amount can be adjusted to taste
Pureness Vinegar Honey Drink
1-2 tsp Pureness Vinegar
2-3 tsp honey*
10-12 oz hot water (to dissolve honey)
Stir until blended, chill with ice if desired.
For a fruity taste, try a squeeze of lemon, thin slices of apples or oranges, or adding some berries to your drink.
Enjoy hot or iced.

Pureness Vinegar Juice Drinks
Add a little Pureness to the juice drinks and smoothies you blend for that extra healthy sweetness!
Recommendation: 2-3 teaspoons

1/4 cup soy sauce
optional flavors:
2 tsp sesame oil, chili oil
2 tsp grated chili, ginger, garlic, yuzu, cilantro, sesame, green onions
Mix in a small bowl. Use with cooking or serve sauce in a shallow dish for dipping.
