Brown Rice – We use brown rice that has been certified organic in Taiwan. The fermentation process releases amino acids and other nutrients found within rice.
Ume – Infused using fresh plums sourced directly from local farms. We dry the freshly picked plums in-house, then add them to the rice to ferment together. Rich in amino acids, minerals (iron and magnesium) and vitamins (A, B, C, and D).
Anka – Infused with natural red yeast also known as koji. We add them to the rice to ferment together. Used for thousands of years in Chinese and Japanese medicine, anka can provide a natural way to help maintain healthy cholesterol levels.

Although you can take our Rice Vinegar as a straight shot, we do not recommend it as the acidic nature of vinegar can be irritating to your stomach. We recommend to mix it with water or juice to dilute the vinegar’s acidity. Also, we recommend rinsing your mouth with water after drinking vinegar.
Store vinegar in a cool, dark place without direct sunlight to help retain quality and taste. No refrigeration is required, however, for best results and if you intend to use the bottle for longer than 3 months after opening, we recommend storing opened bottles in refrigerator. Keep cap tightly closed.
